Pineapple cake recipe

 Here's a simple recipe for a delicious pineapple cake:



*Ingredients:*


For the cake:


- 2 1/4 cups (285g) all-purpose flour

- 1 cup (200g) granulated sugar

- 2 teaspoons baking powder

- 1/2 teaspoon salt

- 1/2 cup (115g) unsalted butter, softened

- 1 cup (235ml) whole milk

- 2 large eggs

- 1 cup (160g) crushed pineapple

- 1 teaspoon vanilla extract


For the cream cheese frosting:


- 8 ounces (225g) cream cheese, softened

- 1/2 cup (115g) unsalted butter, softened

- 2 cups (400g) powdered sugar

- 1 teaspoon vanilla extract


*Instructions:*


1. Preheat your oven to 350°F (180°C). Grease two 9-inch (23cm) round cake pans and line the bottoms with parchment paper.

2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.

3. In a large bowl, using an electric mijxer, beat the butter until creamy. Add eggs one at a time, beating well after each addition.

4. Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with dry ingredients. Beat just until combined.

5. Stir in crushed pineapple and vanilla extract.

6. Divide the batter evenly between the prepared pans and smooth tops.

7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

8. For the frosting, beat the cream cheese and butter until smooth. Gradually add powdered sugar, beating until smooth and creamy.

9. Once the cakes are completely cool, place one layer on a serving plate and spread a thick layer of frosting on top. Place the second layer on top and frost the entire cake with the remaining frosting.
